Hotel Okura Amsterdam to open new culinary centre

In December 2009, Great Hotels of the World member, Hotel Okura Amsterdam, is to open a brand new “Taste of Okura Culinary Centre”. The centre will enable guests to learn techniques used by the hotel’s Michelin starred chefs, while wine fans will be able to join the expert sommeliers to learn how to pair wine and sake with food.

The culinary centre is located on the hotel’s lowest floor and features the latest high-tech Meile equipment. In addition to a kitchen, the area will also boast a wine room, shop and a lounge where the self-made food can be enjoyed.

The Capital appoints Michelin-starred head chef

The award-winning Jerome Ponchelle will become head chef at The Capital Restaurant from November. The Frenchman will maintain the restaurant’s reputation as one of the UK’s top kitchens with two Michelin stars.

Jerome’s new menus will have a distinct French influence and will include his own specialities of game and seafood dishes that use ingredients such as lobster, crab and wild turbot. More traditional English food such as braised oxtail will also feature on the new menu.
